Shrimp Nicoise Salad

Ingredients

  • 3 cups mixed greens or chopped iceberg lettuce and baby spinach & fresh dill
  • 3-4 boiled mini potatoes
  • ¼ cup Provision House dill yellow beans
  • ¼ cup thinly sliced red onions
  • 3 red cabbage pickled eggs, or regular pickled eggs
  • ½ cup halved cherry tomatoes
  • ¼ cup garlic stuffed olives, cut in half
  • 10-15 medium shrimp, peeled and de-veined, marinated in ¼ cup Provision House dill pickle brine  & 1 Tbsp honey mustard, pinch of kosher salt & pepper
  • 1 tbsp olive oil for sauteeing shrimp

  • Boil mini potatoes until fork-tender, then let them cool before slicing.

  • Marinate shrimp in Provision House dill pickle brine, honey mustard, kosher salt, and pepper for at least 15 minutes.

  • In a saute pan, heat olive oil and cook the marinated shrimp until pink and opaque. Set aside.

  • In a large salad bowl or plate, arrange mixed greens, boiled mini potatoes, dill yellow beans, thinly sliced red onions, red cabbage pickled eggs, cherry tomatoes, and garlic-stuffed olives.

  • Place the cooked shrimp on top of the salad.

  • In a separate bowl or jar, mix together Provision House dill pickle brine mayo, dried dill, and pepper to create the dressing.

  • Drizzle the dressing over the salad and toss gently to coat evenly.
